Succotash


This is one of Dad's favorite soups.


In a large sauce pan of lightly salted boiling water, cook:

2 cups of fresh or frozen whole kernel corn

2 cups of fresh or frozen baby lima beans

2 cups of peas


For 10 minutes. Then add:

1/2 cup of chopped onion

1/2 cup chopped green or red pepper


Cook for 5-10 minutes more, or till the vegetables are tender, then drain. Stir in:

1 or 2 Tbsp. Butter (or margarine)

1/2 tsp. salt and

1/4 tsp. pepper


Makes 6 or 7 servings
