Coconut Macaroons

Simple and delicious. Add a little chocolate drizzle on top and and perfecion!

2 large eggs, well beaten
1/2 cup sugar
a generous pinch of salt
1 teaspoon almond or vanilla extract
3 cups sweetened shredded coconut

Whisk eggs, sugar, salt and extract. Blend in the coconut till moistened. Drop onto parchment lined baking sheet and bake in pre-heated 375 degree oven 20-25 minutes till golden on top. Transfer cookies to a rack to cool.

Variations:
Easter= tuck a few jelly beans in top before baking
Chocolate= add 3-4 tablespoons unsweetened cocoa or 1/2 cup chocolate chips

Addins:
1/2-2/3 cup coarse chopped nuts
or 1/4 cup fine chopped candies ginger
